Schiacciata in Edinburgh, baked fresh and filled to order

Croccante means crunchy, and the bread is the point. Our schiacciata is pressed flat, baked until the crust cracks, and filled after you order.

A schiacciata is a Tuscan flatbread, pressed flat and baked crisp

A schiacciata is a Tuscan flatbread. It is pressed flat and baked so the crust is crisp, then split and filled. In Tuscany it is everyday street food: bought while you wait, eaten in the street, sometimes torn and shared straight from the paper.

Pressing the dough flat is what gives the bread its character. Thin enough to crackle when you bite it, sturdy enough to hold a generous filling without going soft.

At Croccante & Co in Edinburgh's West End, every schiacciata is filled after you order it and handed over hot. Croccante means crunchy in Italian, so the bread is the part we care most about.

Schiacciate is the plural. That is why the sign in the shop says schiacciate, and why this page is called that too.

In the shop you will find a full range, from Roma and Napoli to V-Gan and La Contessa, plus a weekly special. Ask the team what is on this week.

Every schiacciata is filled after you order it, not before

There is no row of pre-made sandwiches going soft under a lid. You choose one, we split the bread and fill it in front of you, and it goes over the counter hot.

That is why there is sometimes a wait at the busiest part of the morning. It is also why the crust is still crisp when you unwrap it, and why people are happy to come back for it.

Allergies and intolerances

Our food is made fresh to order in a kitchen that handles many different ingredients, including cereals containing gluten, milk, nuts and sesame.

If you have a food allergy or intolerance, please speak to a member of our team before you order. We will give you the allergen information for anything on the counter that day.

Choose your filling. We take it from there.

The bread is the starting point. Pick from the board, from Roma and Napoli to V-Gan and La Contessa, and we split, fill and wrap your schiacciata after you order.

Not sure what to pick? Tell the team what you like and they will point you to it. Everything on the board is built on the same bread.

There is no wrong choice.

Croccante means crunchy, and the bread is the reason

The name is the bread.

The dough is pressed flat before it goes into the oven, so the crust comes out thin and crackling. Bite in and you hear it before you taste it.

We buy Italian produce and our staff are Italian, and the counter is run the way Samuel ran his first shop back home. If you want to know what friarielli is, or how a schiacciata is meant to be eaten, just ask.

Samuel had already opened a shop like this in Italy. This is the second, and the West End is where it landed.

Sit in, or take it away. A wrapped schiacciata travels well, whether you are heading towards Dean Village, into town, or back to your desk.

Every one is made to order, so at the busiest times there can be a short wait. It is a wait that ends in a hot, crisp schiacciata.
